Linguini with Beef and Tomatoes

– 12 ounces cooked Linguini Noodles 
– 1 tablespoon olive or vegetable oil
– 1 cup veggies- onions, bell peppers, zucchini, squash etc 
– 2 cloves garlic minced 
– 1 lb beef strips for stir-fry or beef flank steak, thinly sliced
– 1 can (14.5 oz) stewed tomatoes, undrained
– 1 teaspoon granulated garlic, divided
– 1/4 teaspoon pepper
– 1/4 teaspoon salt
– 1/2 teaspoon Italian seasoning 
– 1/4 teaspoon dried basil
– Pinch red pepper flakes
– 1/2-1 Tablespoon butter
– Parsley for garnish 
– Freshly shredded Parmesan cheese, if desired

In 12-inch skillet, heat oil over medium-high heat. Cook vegetables in oil about 3 minutes, stirring frequently. Until crisp tender and remove from pan. Sprinkle beef with pepper and 1/2 teaspoon of granulated garlic. Add a little more oil to pan and add garlic. Cook just until fragrant. Stir in beef. Leave undisturbed in single layer for about 45 seconds. Cook 5 to 6 minutes, stirring frequently, until no longer pink.

Stir in tomatoes and rest of seasonings. Add butter. Cook 2 to 3 minutes, stirring frequently and breaking up tomatoes slightly with spoon, until mixture is hot. Stir in pasta. Cook 1 to 2 minutes, stirring constantly, until pasta is well coated and hot. Stir in veggies and serve. Sprinkle Parmesan cheese if desired.
