Let me tell you something….sometimes pork chops can be dry. Honestly. I am not going to lie. I you over cook them or don’t give them some love before cooking…they will be dry.

But, these pork chops??? Tender and juicy every time! I promise. and those potatoes! Oh My. They soak up all those lovely flavors and you will be pleasantly surprised!

– 4-6 Loin Pork Chops 
– 1 Tablespoon Oil
– Salt/Pepper
– About 1/4 cup flour
– 1/2 tsp smoked paprika
– 1 tsp onion powder
– 1/2 tsp garlic powder 
– 1 tsp Season All Salt 
– 1 tsp parsley
– Cajun seasoning (I use Tonys)
– Red Potatoes

Lay out pork chops and season with salt and pepper. Dust with flour on both sides. While doing that heat about 1 Tbl oil in a skillet. Once hot add pork chops and brown slightly on both sides. Remove to a foil lined sheet pan. Deglaze the skillet with water, broth or wine. Pour over chops. Cut red potatoes in half and lay face down on foil. Drizzle Olive oil over all potatoes. Mix together paprika, onion and garlic powders, parsley and season all salt and sprinkle over chips and potatoes. Give a good shake of Cajun seasoning over everything. Salt and pepper the potatoes. Cover sheet pan with foil. Bake at 375 for 50 min – 1 hour. If my chops are under a 1/2 inch I only cook for 50 min. Uncover and broil until slightly golden.
