– 1/2 Ib. boneless skinless chicken breasts, cut into bite-size (I use closer to a pound)
– 2 cups assorted fresh vegetables (sliced carrots, broccoli florets, Asparagus pieces, chopped red peppers)
– 1 teaspoon Oi
– 1/2 teaspoon granulated garlic or garlic powder
– 1/2 teaspoon black pepper
– 1 envelope 0.7 oz.) Good Seasons Italian dressing mix
– 1 can (14-1/2 oz.) chicken broth
– 1-1/2 cups water
– 1/2 cup instant white rice, uncooked

Heat olive oil in pot until hot. Add chicken,cook and stir chicken in hot oil medium-high heat 5 minutes or until chicken is done.
Add broth, water, vegetables and dressing mix. Bring to a boil; cover. Simmer on low heat 5 minutes. Stir in rice, cover and remove from heat. Let stand, covered, 5 minutes.
