Rice Bowls and Burrito Bowls are better when you have a flavorful protein. This Adobo Chipotle Chicken is just that- flavorful!!! This time we put it on top of freshly fried tostada shells- I know it’s unhealthy- but everything in moderation!! Try this chicken and let me know what you think! Remember the more peppers you use the hotter it will be, so judge accordingly.

2-3 chili peppers in adobo sauce, canned
1-3 tsp sauce from same can
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon oregano
1 lime, juiced
About 1/4 cup water
1 1/2 pounds chicken breasts, diced into bite size pieces
1 1/2 Tablespoons olive oil

Add all ingredients except chicken and oil to blender and blend until smooth.
Add marinade to diced chicken and stir well. Marinate 15 min-1 hour in fridge. Heat oil in skillet and add chicken. Cook undisturbed for about a minute the. Stir and cook until cooked through. Serve hot in rice bowls, burritos etc!
