I have always been a fan of peanut butter cookies. Especially if chocolate is involved! So what better combination than my favorite Easter candy and a peanut butter cookie!! Peanut Butter Cadbury Cookies
?Ingredients
- Mini Cadbury eggs
- ½ cup shortening (I used Crisco)
- ¾ cup Peanut Butter
- ? cup sugar
- ? cup light brown sugar, packed
- 1 egg
- 2 Tbsp milk
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt.
- ½ sugar, for rolling
?Directions
Preheat oven to 375°F and line cookie sheet with parchment paper.
Beat shortening and peanut butter in large bowl until well blended.
Add ? cup granulated sugar and brown sugar; beat until fluffy.
Add egg, milk and vanilla; beat well.
Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
Shape dough into 1-inch balls. Roll in sugar and place on prepared cookie sheet.
Bake 7-8 minutes or until edges are set and cracks are just beginning to form.
Immediately press a Cadbury egg into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely.
