This Almond Rice Pilaf is such a great side dish and so fast and easy using instant rice! I love to serve it with chicken and some veggies. Sometimes plain rice is boring and you need a little extra!

½ cup chopped onion
1-2 garlic cloves minced
½ cup slivered almonds
1 T. butter or margarine
2 cups chicken broth
2 cups uncooked instant rice
Better than Bouillon (according to directions)

In a saucepan, sauté onion, garlic and almonds in butter until the onion is tender und the almonds are lightly browned. Add rice and stir to incorporate. Add water and better than bouillon; bring to a boil. Stir in rice and cover. Remove from the heat. Let stand for 5-8 minutes or until liquid is absorbed.
