This recipe is an easy and basic recipe that comes together quick! I love easy soup recipes! This one is full of flavor and you can adjust amounts so easily to feed less or more people. This recipe serves 5-6  I know you’ll love this flavor packed recipe. And don’t forget the garnishes!!  Rice and corn and all the extras is what makes the soup so much better!  I serve my rice and corn in the side so everyone can make their bowl just like they like it!

1 Tablespoon olive oil for sautéing
1/2 small onion
2 garlic cloves, minced or 1/2 tsp. garlic powder
1 1/2 Tablespoons chili powder
3 teaspoons cumin, ground
3/4 teaspoon oregano
1/4 teaspoon pepper
1/4 teaspoon paprika
Better than Bouillon (package directions for 3 cups water) or 3 bouillon cubes
3 cups water
3 -4 cups chicken broth
8 ounces tomato sauce
1 tsp. sugar
1 bay leaf
3 chicken breasts (around 1 pound uncooked)
1 Tablespoon fresh cilantro

Sauté onion and garlic in olive oil or you can use 1/4 cup water until tender. Add chili powder, cumin, oregano paprika and pepper and sauté one minute. Add water, better than bouillon, chicken broth, tomato sauce, sugar and bay leaf and bring to boil. Add chicken and SIMMER for 10 minutes, covered. Remove chicken and shred. Return chicken to soup, add cilantro–heat through.
For garnishes: cooked instant rice, corn, lime, cheese, cilantro and tortilla strips
