Who needs FAST weeknight meals?! ???? This Quick and Easy Beef and Broccoli is just that!  I call it Kid Friendly Beef and Broccoli because kids love it too! Tender beef and crisp broccoli and kids love not having to pick out big onions! Ha! Put it on your menu plan for next week. I promise it will be a hit!

1/2 cup soy sauce low sodium

2 Tablespoons cornstarch -divided

3 cloves garlic minced

2 Tablespoons sherry

3 Tablespoons honey

1 teaspoon fresh ginger minced

2 Tablespoon sesame oil

1/4 tsp red pepper flakes

1 Tablespoon Sriracha sauce or to taste

1/2 cup beef broth or chicken broth, low sodium or no sodium- optional, used to thin

1 Tablespoon olive oil

1 pound flank steak or sirloin trimmed of fat and sliced thin against the grain

1 head broccoli cut

In a medium bowl, whisk together the soy sauce, 1 Tablespoon cornstarch, garlic, sherry, honey, ginger, sesame oil, red pepper flakes, Sriracha sauce. Set aside until ready to use.
Heat the olive oil in a large skillet. Combine 1 Tablespoon corn starch with sliced beef in a bowl. Add the beef to the hot skillet a 1/3 at a time, In a thin layer and cook undisturbed for about 30 seconds then flip over and cook another minute until done. Continue until all meat is cooked and removed to a plate. Add about a teaspoon of sesame oil and add broccoli and cook until crisp tender – quickly add beef back in and then combine with sauce. Let sauce thicken and serve immediately over rice.
