Lasagna in a soup?! Yes, please!  It’s Soup Season and we want comfort in a bowl!  But we also need to be paying attention to our protein. Well, this pasta is a fav of our and their ruffles style is perfect for lasagna soup!! Pastabilities is available on Amazon. Real Pasta. REAL good! 

Over the years I have tweaked this recipe so that my family loves it. I hope you change it up for your families likes as well!

– 1 Tablespoon olive oil
– 1/3 cup finely chopped onion
– 2 (about 5 cloves) teaspoons minced garlic
– 1/4 pound ground sausage
– 3/4 pound ground hamburger
– 32 ounce container chicken broth
– 2 – 14.5 ounce cans petite diced tomatoes with juice (I blend mine up so it’s not chunky)
– ?6 ounce can tomato paste
– 1/4 teaspoon kosher salt
– 1/4 teaspoon black pepper?1 teaspoon ground oregano
– 1/2 teaspoon Italian seasoning
– 1/2 teaspoon dried basil
– Pinch red pepper flakes
– 1 pkg (8 oz) pastabilities protein ruffles pasta
– 1/4 cup shaved parmesan cheese
– 1/2 cup shredded mozzarella cheese
– extra mozzarella or Parmesan for serving

Heat the olive oil in a large pot over medium-heat. Add in the onion and cook for 1-2 minutes. Stir in the garlic and cook an additional minute. Add in the sausage and hamburger, breaking up with a wooden spoon and cook unti browned. Drain any excess grease. Add in chicken stock, blended tomatoes and tomato paste. Stir until combined and then add the seasonings. Bring to a light boil and add the noodles. Cook for 13-15 minutes, or until noodles are tender.Stir in cheeses and taste for seasonings. Serve with additional cheese if desired. Enjoy!
