…. Awe…total comfort food that is a quick meal. So similar to the boxed variety we grew up eating. Total comfort food and all in one skillet!  Can’t go wrong. Let me know if you get up in the 80s eating this!

– 1 pound ground beef
– 2 Tablespoons finely chopped onion
– 2 cloves of garlic, minced or 1 tablespoon granulated garlic
– 1/2 tablespoon season salt (I use Lawrys)
– 4 cups beef broth (or chicken broth)
– 1/2 teaspoon pepper
– 1/2 teaspoon paprika
– 1/4-1/2 teaspoon Cajun seasoning
– 16 ounces elbow macaroni, uncooked
– 1 cup milk
– 2 cups shredded Colby Jack cheese
– 2 cups Cheddar (medium or sharp)
– Top with parsley and seasonings if desired

In a large skillet, season the beef with the onion, garlic and seasoning salt, then brown the ground beef. Once the beef is cooked, drain the excess grease. Add in the beef broth and bring to a simmer. Add in the pepper, paprika and Cajun seasonings and the macaroni and stir. Simmer for about 15-20 minutes, stirring occasionally, until the pasta is tender. Add in the milk and stir. Add in the cheeses in batches and stir until melted. Serve immediately.
