I love Christmas Cookies! I love all kinds…but the classics never go out of style! These Peanut Butter Kiss Christmas Cookies are a favorite around here … so we just make them a little more Christmas-y. You should add them to your holiday baking list! I mean Peanut Butter and Chocolate is a brilliant combination after all!!! ??

– 48 Hershey’s Kisses chocolate candies
– 1/2 cup shortening (I used Crisco)
– 3/4 cup Peanut Butter
– 1/3 cup sugar
– 1/3 cup light brown sugar, packed
– 1 egg
– 2 Tbsp milk
– 1 tsp vanilla extract
– 1 1/2 cups all-purpose flour
– 1 tsp baking soda 1/2 tsp salt
– 1/2 cup or so of sugar, for rolling (red and green decorating sugar if you have it)
– Green frosting, homemade in a piping bag or store bought squeeze tube*
– Red and green sprinkles

Preheat oven to 375°F and line cookie sheet with parchment paper. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; mix this until just combined, making sure not to overman. Shape dough into 1-inch balls. I like to use a 2 tsp cookie scoop. Roll in sugar and place on prepared cookie sheet. Bake 7-8 minutes or until lightly browned. Remove candy wrappers while baking. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely.*
The cookies need to be completely cooled and chocolate hardened before decorating. With icing in a piping bag or a squeeze tube start at base of kiss and swirl upward to point. Immediately sprinkle with Christmas sprinkle and let set until firm.
*Putting cookies in fridge for 10 minutes helps the cookies to set quicker before decorating
*If buying frosting at store look to see it is decorating icing, not gel
