This Raspberry Vinaigrette is so delicious! It’s a perfect dressing for baby leaf lettuce paired with sliced fruits, bacon, cucumber etc! Any way that you enjoy it, it will be perfection! 6 ounces fresh raspberries, rinsed and drained (about 1 ½ cups)
4 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 1/4 teaspoon honey
¼ teaspoon kosher salt
¼ teaspoon coarse ground black pepper

Smash raspberries and push through a fine mesh strainer. Add the juice from the berries to a jar and combine with all other ingredients. Shake well to emulsify. If you have time pop in fridge for atleast 30 min to let the flavors meld together.
