Do you like chili?! Want to find a way to add a little more veggies to it? Try this Pumpkin Chili! I have a couple favorite chili recipes I make every year.. and this is one of them!

I remember when my mom first told me to try it…I was so very skeptical. I didn’t want to risk MY chili night on a dud.

But honestly, I love it! I also loved I was sneaking in some veggies for my kids back then. Now, they eat their veggies with no sneaking and we still make this every season. I also have my standard chili recipe that I love and simmer alllll day. But this one is quick and so it is made every year!

– 1 pound ground beef
– 1 (15-ounce) can chili style tomatoes
– 1 (15-ounce) chili beans, drained
– 1 (15-ounce) can pureed pumpkin
– 1/2 cup chopped onion
– 1/2 cup chopped red bell pepper
– 1/8 tsp cayenne pepper
– 1 teaspoon crushed red pepper
– 3 Tablespoons chili powder
– 3 teaspoon minced garlic
– 1 teaspoon cumin
– 1/2 teaspoon smoked paprika
– 1 teaspoon salt
– Pinch sugar
– 4 cups water

In Dutch oven brown ground beef with onions and peppers. Drain any grease. Mix in all other ingredients, stir well to combine, and bring to a boil over high heat. Reduce to medium-low and simmer, covered, 35 minutes. Serve warm with any desired toppings.
