With a perfect balance of tangy lemon and a soft crumb topping, these muffins are light, fluffy, and full of flavor. Whether you're making them for a weekend brunch, a special occasion, or simply for a cozy morning at home, these muffins will become a favorite in your recipe rotation.

Instructions

Combine dry and wet ingredients

Hint: When adding crumb topping pat down slightly with back of spoon. Then add a tad more on top. This ensures a coating adheres to the muffin and then then also has the flaky falling off appearance as well.
Substitutions
No sour cream on hand? No problem, substitute it for plain yogurt!
Equipment
A well stocked kitchen makes baking and cooking so much more enjoyable! I definitely have a few favorites. Using a #20 cookie scoop is so helpful. Also, a good quality muffin pan is essential!

Muffin Baking Tips
- Evenly Sized Muffins: I love to use a cookie scoop for my muffins. For a 12 muffin pan I use a size 20 scoop and I fill it heaping full.
- Baking Ingredients: Making sure the butter and milk are room temperature helps all of the ingredients to mix properly.
- Mixing Ingredients: In order to achieve a tender muffin is NOT to over mix the batter. As soon as there are no more white flour streaks, stop mixing.
- Resting the batter: I always allow my muffin batter to rest 5 minutes before scooping into the muffin pan. This helps the height of the muffins.
- Presentation: I like to place a little crumb muffin on top of each muffin and pat in. Then add more on top. This helps the crumb mixture adhere.
Storage
Thawing:ย To thaw, let sit at room temperature or place in microwave for 15-30 seconds.
Storing: Muffins will keep at room temperature for 3-4 days if stored in an airtight container or bag. Be sure and cool completely before storing.
Freezing:ย Let muffins cool completely, then add to an airtight container or freezer bag. Store in freezer for up to 2 months.ย If using a bag, lay them all flat and freeze, this way you can remove how ever many you need at a time. I make a fresh glaze usually. But this is an extra step that is not necessary. These are delicious with out the glaze.

Lemon Crumb Muffins
Ingredients
- 3 cups all-purpose flour
- 2 cups sugar
- ยผ teaspoon + โ teaspoon baking soda yes, ยผ and โ
- ยผ teaspoon + โ teaspoon salt yes, ยผ and โ
- 4 large eggs room temperature
- 1 cup sour cream
- 1 cup butter melted
- 1 ยฝ Tablespoons grated lemon zest
- 1 Tablespoons lemon juice
- ยฝ teaspoons lemon extract
Crumb Topping
- 6 Tablespoons all-purpose flour
- 6 Tablespoons sugar
- 2 Tablespoons cold butter cubed
Glaze
- ยผ cup granulated sugar
- 2 Tablespoons fresh lemon juice
- 2 teaspoons fresh lemon juice yes, 2T and 2t
Instructions
- In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, combine the eggs, sour cream, butter, lemon zest, juice and extract. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full.
- In a small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over batter pat down slightly then add a little more over top.ย
- Bake at 350ยฐ for 18-22 minutes or until a toothpick inserted in the center comes out clean. Be sure not to over-bake. Cool for 5 minutes before removing from pans to wire racks.
- Whisk the glaze ingredients in a small bowl and drizzle over warm muffins.
