– 3 cups all-purpose flour
– 2 cups sugar
– 1/4 teaspoon + 1/8 teaspoon baking soda
– 1/4 teaspoon + 1/8 teaspoon salt
– 4 large eggs, room temperature
– 1 cup sour cream
– 1 cup butter, melted
– 1 1/2 Tablespoons grated lemon zest
– 1 Tablespoons lemon juice
– 1/2 teaspoons lemon extract
TOPPING:
– 6 Tablespoons all-purpose flour
– 6 Tablespoons sugar
– 1/8 cup cold butter, cubed (2 T)
GLAZE:
– 1/4 cup sugar
– 2 Tablespoons + 2 teaspoons lemon juice

1. In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, combine the eggs, sour cream, butter, lemon zest, juice and extract. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full.

2. In a small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over batter pat down slightly then add a little more over top. 

3. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Be sure not to over-bake. Cool for 5 minutes before removing from pans to wire racks. In a small bowl, whisk glaze ingredients; drizzle over warm muffins. Serve warm.
