Who loves German Pancakes?!  

My family does. However, there were only 4 corners and 5 of us! So I decided to make Mini German Pancakes and now everyone gets a corner! This is a FAST breakfast!  I love those!  Serve it with syrup, cinnamon sugar, powdered sugar fruit, jam… possibilities are endless really! How do you like to top your German Pancakes?

6 eggs
1 cup flour
1 cup milk
1 Tosp. sugar
1/2 teaspoon salt
1/2 stick butter

Preheat the oven to 375 degrees. Slice the butter and evenly distribute between the muffin pans. Put pans in oven while it is preheating to melt the butter. But keep an eye on it so butter doesn’t burn. In a bowl, beat together remaining ingredients. Then pour some batter into each cup making sure it is equally divided. I find about 1/8 of a cup or slightly more is exactly what I need. Bake for about 11-14 minutes, or until it is golden brown, or as golden as you prefer.
