This One Pan Chicken Dinner is a must try!!! Creamy Orzo with Asparagus and Chicken is always a hit in our house!  It’s so flavorful, comforting and easy!  I like to lay out all of my ingredients so it pulls together quickly and easily. I hope you will try it!

Creamy Orzo with Asparagus and Chicken

Ingredients
  

  • 4-6 thinner chicken breasts boneless and skinless, thin a little with tenderizing
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ Tablespoon paprika
  • ½ Tablespoon smoked paprika
  • ½ Tablespoon granulated garlic
  • 1 Tablespoon cajun seasoning
  • 2-3 tablespoon olive oil divided
  • 1 cup asparagus chopped
  • ¼ cup finely diced onion
  • 4 cloves garlic minced
  • 2 cups orzo uncooked
  • 2 cups half and half fat free
  • 3 cups chicken broth low sodium
  • 1 cup Parmesan cheese grated
  • Extra seasonings to taste

Instructions
 

  • Place small baking sheet or oven safe dish in oven and heat to 170. Season the chicken breasts with salt, pepper, paprikas, garlic and cajun seasoning on both sides. In a large skillet heat 1 ½-2 Tablespoons of olive oil over medium-high heat. Sear the chicken for about 5 minutes per side, or until golden brown and cooked through. Depending on the thickness of your chicken you might need longer time. Transfer the chicken to a warmed pan, cover with foil and place back in oven to keep hot. In the same skillet add the asparagus and saute for about 3 minutes, just until it starts to soften and starts to brown a bit. Transfer to a plate; set aside. In the same skillet add a little more olive oil. Add the onion and garlic and saute for about 1 minute until the onion is translucent and the garlic becomes aromatic. Add the orzo to the skillet and saute for just one minute, to get it a little toasted, this will give it a nutty flavor. Add the half and half and chicken broth and stir. Bring to a boil, then turn the heat down to a medium-low, cover with lid and let it cook for 10 minutes. Remove the lid and stir in the Parmesan cheese. Taste for seasoning and adjust with salt and pepper, granulated garlic and cajun seasoning. Add the asparagus back and stir it in. Slice the chicken into thin slices. You can either add it to the skillet and stir it in or lay on top for presentation.
