Over the years I have tweaked this recipe so that my family loves it. I hope you change it up for your families likes as well!
Lasagna Soup with Protein Pasta
Ingredients
- 1 Tablespoon olive oil
- ⅓ cup onion finely chopped
- 2 teaspoons minced garlic
- ¼ pound ground sausage
- ¾ pound ground hamburger
- 32 ounces chicken broth
- 2 - 14.5 ounce cans petite diced tomatoes with juice I blend mine up so it’s not chunky
- 6 ounce can tomato paste
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 teaspoon dried oregano
- ½ teaspoon Italian seasoning
- ½ teaspoon dried basil
- Pinch red pepper flakes
- 8 ounce pkg Pastabilities protein ruffles pasta
- ¼ cup shaved parmesan cheese
- ½ cup shredded mozzarella cheese
- extra mozzarella or Parmesan for serving
Instructions
- Heat the olive oil in a large pot over medium-heat. Add in the onion and cook for 1-2 minutes. Stir in the garlic and cook an additional minute. Add in the sausage and hamburger, breaking up with a wooden spoon and cook unti browned. Drain any excess grease. Add in chicken stock, blended tomatoes and tomato paste. Stir until combined and then add the seasonings. Bring to a light boil and add the noodles. Cook for 13-15 minutes, or until noodles are tender.Stir in cheeses and taste for seasonings. Serve with additional cheese if desired. Enjoy!
