Linguini with Beef and Tomatoes
Ingredients
- 12-16 ounces cooked Linguini Noodles
- 1 tablespoon olive or vegetable oil
- 1 cup veggies- onions bell peppers, zucchini, squash etc
- 2 cloves garlic minced
- 1 lb beef strips for stir-fry or beef flank steak thinly sliced
- 14.5 oz can stewed tomatoes, undrained
- 1 teaspoon granulated garlic divided
- ¼ teaspoon pepper
- ¼ teaspoon salt
- ½ teaspoon Italian seasoning
- ¼ teaspoon dried basil
- Pinch red pepper flakes
- ½-1 Tablespoon butter
- Parsley for garnish
- Freshly shredded Parmesan cheese if desired
Instructions
- In 12-inch skillet, heat oil over medium-high heat. Cook vegetables in oil about 3 minutes, stirring frequently. Until crisp tender and remove from pan. Sprinkle beef with pepper and ½ teaspoon of granulated garlic. Add a little more oil to pan and add garlic. Cook just until fragrant. Stir in beef. Leave undisturbed in single layer for about 45 seconds. Cook 5 to 6 minutes, stirring frequently, until no longer pink.
- Stir in tomatoes and rest of seasonings. Add butter. Cook 2 to 3 minutes, stirring frequently and breaking up tomatoes slightly with spoon, until mixture is hot. Stir in pasta. Cook 1 to 2 minutes, stirring constantly, until pasta is well coated and hot. Stir in veggies and serve. Sprinkle Parmesan cheese if desired.
