Sweet and spicy Cowboy Candy is made with pickled jalapeños, sugar, and cinnamon for a bold, addictive flavor. It’s perfect on crackers, sandwiches, eggs, or as a fun homemade gift!
In a wide mouth mason jar (pint size gives you room to flip), add jalapeños with no juice about ⅓ of the way up. Pour on 2-3 T sugar. Add the rest of the slices. Add 2-3 more T sugar and good dash or two of the jarred juice-just enough to moisten everything. Add the cinnamon sticks and ground cinnamon. Flip over and over until sugar is beginning to dissolve and cinnamon is well disperesed. Check consistency. It should have a thick layer of juice. Add more sugar if it is too thin or you can not see a sugary coating. This will be absorbed in the fridge with a little time.Store in fridge, flipping throughout day so all peppers are coated and sugar is completely dissolved.
