1Tablespoonplus 1 teaspoons chili powder
2teaspoonground cumin
½teaspoonpaprika
1teaspooncayenne
One ham bone plus cut up pieces of hamabout 1 cup
3clovesgarlic
2bay leaves
½medium oniondiced
Kosher salt and freshly ground black pepper
Instructions
Heat your choice of fat over medium high. Add chopped onion and sauté until turning translucent. Add garlic for a few seconds until aromatic. Add seasonings and stir until aromatic. Add washed, soaked and rinsed beans and stir well until covered in seasonings. Add a bit of water to incorporate all seasonings. Add ham bone and ham pieces. Add bay leaves, salt and pepper - cover and bring to a light boil. Turn down to medium low and cover. Simmer until tender. About 2 ½ - 3 hours
