This lightened-up Creole Chicken Stew is full of bold flavor without the heaviness of traditional stews. Made with lean chicken, vibrant veggies, and served over rice, it’s a healthy and hearty meal the whole family will love.
1 ½poundsskinless boneless chicken thighscut into 1-inch chunks
½teaspoonsalt
¼teaspoonfreshly ground black pepper
2slicesbaconchopped (optional, turkey bacon option as well)
2teaspoonsminced garlic
¼cupwhite wine
15 ozwhole tomatoes in juicecanned
⅔cupwater
½teaspoondried oregano
½teaspoonground cumin
¼teaspoondried thyme
¼teaspoonCajun seasoning
½teaspoonbottled hot pepper sauce
⅓-1/2poundfresh green beanstrimmed and cut into 1-inch pieces

Instructions
Cook bacon in large deep sided skillet until almost done.
Add the bell pepper and onion; cooking and stirring for 4 minutes or until tender. Add garlic and sauté for about a minute until fragrant. Transfer to a bowl.
Add olive oil to the skillet and add chicken. Sprinkle with salt and pepper. Cook, stirring occasionally, until browned.
Pour in wine; deglaze bottom of pan, cook 1 minute. Stir in tomatoes, bell pepper mixture, water, oregano, cumin, thyme, Cajun seasoning and hot sauce; bring to a boil. Make sure to pierce tomatoes and even chop up if desired.
Add green beans; reduce heat and simmer, covered, for 15-25 minutes, or until chicken is cooked through. Serve over rice, if desired.
Notes
Using turkey bacon and brown rice will make this recipe even more heart healthy!
