Classic Snowball Cookies are tender, buttery pecan cookies rolled twice in powdered sugar for a thick, snowy coating. A simple and delicious Christmas cookie that melts in your mouth!
Line sheet pans with parchment paper.Toast the pecans in a dry skillet over medium heat until fragrant and lightly golden, about 3–4 minutes. Let them cool completely. Beat the softened butter and powdered sugar together until light and fluffy. Mix in the vanilla and salt. Gradually add the flour, mixing until just combined. Fold in the toasted pecans until evenly distributed. Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet. Bake at 350°F for 12–15 minutes, until the bottoms are just barely golden but the tops are still pale. Let them cool for about 5 minutes, then roll them in powdered sugar while they're still warm. Let them cool completely, then roll them in powdered sugar one more time for that perfect snowy coating. (put about 1 cup powdered sugar into a zip top bag and place 3 cooled cookies and gently roll around until coated-repeat until all cookies are coated)
Notes
Be sure to check cookies at 12/13 minutes. You want to see the bottoms barely golden and the tops still pale. Baking too long yields a dry and crumbly cookie. Be sure not to pack the flour in the measuring scoop. Spoon into the cup and level off. And mix into the dough JUST until combined.
