Pork Chops with Red Potatoes

Theseย juicy and tender pork chopsย come out perfectย every single time. And the real secret? Itโ€™s all in the prep and pairing. Especially when you serve them with theseย flavor-packed potatoesย that soak up every drop of deliciousness from the pan. Itโ€™s a simple, hearty meal that feels like comfort food but tastes like something special.

Ingredients

  • pork loin chops with bone
  • olive oil
  • salt/pepper
  • flour
  • smoked paprika
  • onion powder
  • garlic powder
  • season all salt
  • parsley
  • cajun seasoning
  • red potatoes

Instructions

Preheat oven to 375โ„‰. Lay out pork chops and season with salt and pepper. Dust with flour on both sides. While doing that heat about 1 Tbl oil in a skillet. Once hot, add pork chops and brown slightly on both sides. Remove to a foil lined sheet pan. Deglaze the skillet with water, broth or wine. Pour over chops. Cut red potatoes in half and lay face down on foil. Drizzle olive oil over all potatoes. Mix together paprika, onion and garlic powders, parsley and season all salt and sprinkle over chips and potatoes. Give a good shake of Cajun seasoning over everything. Salt and pepper the potatoes. Cover sheet pan with foil. Bake at 375 for 50 min - 1 hour. If my chops are under a ยฝ inch I only cook for 50 min. Uncover and broil until slightly golden.

Sheet Pan Dinners

Honestly, having a dinner cook on a sheet pan makes clean up a breeze. I know these are pan seared first so you have to clean a skillet...but if you use good foil on the pan the sheet pan cleaning is so quick.

Storage

These make great left overs! I like to reheat mine in a skillet with a little water and a lid. Creating a steam effect so that the pork chops do not dry out. Those potatoes....are delicious the next day!

Ingredients

  • 4 Loin Pork Chops
  • 1 Tablespoon Oil
  • Salt/Pepper

  • 8 Red Potatoes cut in halves or quarters
