This soup is a favorite during the cold months at our house! Full of taco flavor with a little kick and hearty enough to fill up a hungry teen! Another favorite soup recipe is this Ham Potato and Corn Soup!

Ingredients

Taco Soup Ingredients

Instructions

To start, brown your ground beef and onions in a large pot until it’s no longer pink. Next, drain any excess grease. Then, add the rest of the ingredients, stirring everything together until well combined. As the soup simmers, the spices meld perfectly, creating that rich, hearty Tex-Mex flavor you’ll love. Meanwhile, get your toppings ready — shredded cheese, sour cream, and tortilla chips make the perfect finishing touch. Finally, ladle the soup into bowls, add your favorite garnishes, and enjoy a warm, comforting meal that’s as simple to make as it is satisfying.

Equipment

A quality soup pot is essential! A 6 - 7 quart is a good size. I like this one on Amazon. I also suggest using THIS to brown and crumble your beef.

Crockpot Options

Add the cooked hamburger and onions to a 6-7 qt crockpot. Add the rest of the ingredients to the crockpot and cook on low for 3 hours.

Storage

I like to store this Taco Soup in a glass container in the refrigerator, where it stays fresh for 3 to 4 days. It’s even better the next day as the flavors have time to blend together — making leftovers something to look forward to! This soup also freezes beautifully. I like to portion it into individual servings using quart-sized freezer bags, then lay them flat to save space. It will keep well in the freezer for up to 3 months, making it a great make-ahead meal for busy days.

Yes! I like the Ranch Style but any chili bean or pinto bean will work

Ingredients

  • 1 pound ground beef
  • ½ cup yellow onion chopped
  • 14.5 ounce diced tomatoes, canned blended or use crushed
  • 10 ounce diced tomatoes with green chiles, canned ex. Rotel
  • 4 ounce tomato sauce, canned
  • 32 ounce Ranch Style beans, canned chili beans or pintos
  • 4 ounce diced green chiles, canned
  • 15 ounce whole kernel corn drained
  • 1 ounce taco seasoning
  • 1 ounce FIESTA Ranch Seasoning packet must be Fiesta flavor
  • 2 ½ cups water

Instructions

  • Over medium hight heat brown the ground beef with the onions in a large soup pot until it’s no longer pink. Drain any excess grease.
  • If a less chunky soup is preferred, been the 1 can of the diced tomatoes together or even use crushed tomatoes.
    Add the rest of the ingredients to the pot except the water. Give this a good stir. Using the 2 ½ cups of water rinse tomato and bean cans and pour into pot. Stir everything together until well combined. 
  • Turn down the heat to medium or medium low heat and let the soup simmer for 30-45 minutes.
    Serve with garnishes of chips, grated cheddar cheese, sour cream, avocado etc.
