Rice Bowls and Burrito Bowls are better when you have a flavorful protein. This Adobo Chipotle Chicken is just that- flavorful!!! This time we put it on top of freshly fried tostada shells- I know it’s unhealthy- but everything in moderation!! Try this chicken and let me know what you think! Remember the more peppers you use the hotter it will be, so judge accordingly.
Adobo Chipotle Chicken
Ingredients
- 2-3 chili peppers in adobo sauce canned
- 1-3 teaspoon sauce from same can
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon oregano
- 1 lime juiced
- About ¼ cup water
- 1 ½ pounds chicken breasts diced into bite size pieces
- 1 ½ Tablespoons olive oil
Instructions
- Add all ingredients except chicken and oil to blender and blend until smooth.
- Add marinade to diced chicken and stir well. Marinate 15 min-1 hour in fridge. Heat oil in skillet and add chicken. Cook undisturbed for about a minute the. Stir and cook until cooked through. Serve hot in rice bowls, burritos etc!
