¾cupmini semi sweet chocolate chipsextra for topping
Instructions
Preheat oven to 400℉.
Line a 12-cup muffin pan with 12 muffin liners.
Place the butter and sugar in a mixing bowl and beat with a spatula or wooden spoon until light and fluffy. Beat in the eggs, sour cream, milk and vanilla until combined. Sift the flour, baking soda, baking powder and salt into the batter. Stir until just blended, with a few flour streaks still visible-add the chocolate chips. Stir just until combined. Using a large cookie scoop or a size 20 scoop, divide the batter evenly among the muffin liners. If desired sprinkle extra sugar and mini morsels right on top before baking. Bake in a preheated oven, 400°F for 16-18 minutes, or until risen and golden. Remove the muffins from the oven and let cool in the pan for 5 minutes, then place them on a wire rack to cool completely.
Notes
If using a #20 cookie scoop, make scoops heaping. There is enough batter for 12 muffins.Using room temperature ingredients allows the batter to mix evenly. Do not over mix! Or your muffins will be dry and tough.
