How to Make Chocolate Chip Muffins

To begin, line a 12-cup muffin pan with paper liners and set it aside. Next, in a mixing bowl, beat the butter and sugar together with a spatula until the mixture becomes light and fluffy. Then, add the eggs, sour cream, vanilla, and milk, mixing until everything is well combined.

After that, sift the flour, baking soda and powder and the salt directly into the batter, and gently stir until just blended, being careful not to over mix. when the batter has a few streaks of flour left fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.

Now, divide the batter evenly among the prepared muffin liners. If desired, top the batter with extra chocolate chips and a sprinkling of sugar for a pretty presentation. Bake in a preheated oven at 400ยฐF for about 16-18 minutes, or until the muffins are risen and golden brown. Finally, remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Baking Tips

  • Evenly Sized Muffins: I love to use a cookie scoop for my muffins. For a 12 muffin pan I use a size 20 scoop and I fill it heaping full.
  • Baking Ingredients: Making sure the butter and milk are room temperature helps all of the ingredients to mix properly.
  • Mixing Ingredients: In order to achieve a tender muffin is NOT to over mix the batter. As soon as there are no more white flour streaks, stop mixing.
  • Resting the batter: I always allow my muffin batter to rest 5 minutes before scooping into the muffin pan. This helps the height of the muffins.
  • Presentation: Sprinkling extra mini morsels on tops and sprinkling with some extra sugar ensures a pretty muffin!

Storage

  • Storing:ย Muffins will keep at room temperature for 3-4 days if stored in an airtight container or bag. Be sure and cool completely before storing.
  • Freezing:ย Let muffins cool completely, then add to an airtight container or freezer bag. Store in freezer for up to 2 months.ย If using a bag, lay them all flat and freeze, this way you can remove how ever many you need at a time.
  • Thawing:ย To thaw, let sit at room temperature or place in microwave for 15-30 seconds.

Ingredients

  • 4 Tablespoon butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • ยฝ cup sour cream
  • โ…“ cup milk room temperature
  • ยฝ teaspoon vanilla or vanilla bean paste
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ยฝ teaspoon salt
  • ยพ cup mini semi sweet chocolate chips extra for topping

Instructions

  • Preheat oven to 400โ„‰.
  • Line a 12-cup muffin pan with 12 muffin liners. ๏ปฟ๏ปฟ
  • Place the butter and sugar in a mixing bowl and beat with a spatula or wooden spoon until light and fluffy.
    Beat in the eggs, sour cream, milk and vanilla until combined. ๏ปฟ๏ปฟ
    Sift the flour, baking soda, baking powder and salt into the batter.
    Stir until just blended, with a few flour streaks still visible-add the chocolate chips. Stir just until combined.
    Using a large cookie scoop or a size 20 scoop, divide the batter evenly among the muffin liners. If desired sprinkle extra sugar and mini morsels right on top before baking.
    Bake in a preheated oven, 400ยฐF for 16-18 minutes, or until risen and golden.
    Remove the muffins from the oven and let cool in the pan for 5 minutes, then place them on a wire rack to cool completely.

Notes

If using a #20 cookie scoop, make scoops heaping. There is enough batter for 12 muffins.
Using room temperature ingredients allows the batter to mix evenly.ย 
Do not over mix! Or your muffins will be dry and tough.ย
