15-16ouncescanned chick peasdrain, reserving juice
2Tablespoonslemon juicefreshly squeezed
¼ cup extra virgin olive oil

Instructions
Drain the chickpeas, but be sure to reserve the liquid from the can. Add the chickpeas along with the remaining ingredients to a food processor. Process for a couple of minutes until everything begins to blend together, stopping to scrape down the sides of the bowl as needed.If the hummus seems too thick, gradually add some of the reserved chickpea liquid, about one tablespoon at a time, to help create a smoother texture. Continue processing the mixture for about 5 minutes, stopping occasionally to scrape the sides and add a little more liquid if necessary.Once the hummus is completely smooth and creamy, transfer it to a serving bowl. Enjoy it right away, or store it in the refrigerator until ready to serve.
