½cup oilcanola or vegetable will keep it from hardening or do half canola and half olive
½cupdistilled white vinegarfor less tang use red wine vinegar for half the amount
1 packetHidden Valley Ranch FIESTA dip
Marinade for chicken
⅓cupprepared dressing from above
1tsp chili powder
½teaspooncumin
½tsp garlic powder
¼teaspoonblack pepper
Chicken
1 ½poundchicken breasts or chicken thighstrimmed and pounded to all same thickness
Instructions
For the dressing add all 3 ingredients to a dressing cruet or mason jar.Shake vigorously until emulsified. Store in fridge for about 2 weeks.
To make marinade, mix together ⅓ cup of the dressing and add rest of ingredients to a gallon size zip top baggie. Take the trimmed chicken and using a fork pierce holes all over chicken. Add trimmed chicken and let marinate for 30 minutes to 8 hours.
