Ok ya'll. When I say this is the easiest marinade you will ever make...I am not kidding!
- oil
- distilled vinegar
- Packet Hidden Vally Ranch FIESTA Dip Mix
- chili powder
- cumin
- garlic powder
- black pepper

Instructions
I use this recipe as a salad dressing See Fiesta Salad and a marinade! All you do is mix all the ingredients together and shake well. I love to use a pint size mason jar with these Awesome lids!
Storage
This dressing stays good for a couple weeks in the fridge. Try it on salads, as a marinade, drizzled on chicken tacos etc.

Fiesta Chicken Marinade
Ingredients
Dressing to add to marinade then use on salads...
- ½ cup oil canola or vegetable will keep it from hardening or do half canola and half olive
- ½ cup distilled white vinegar for less tang use red wine vinegar for half the amount
- 1 packet Hidden Valley Ranch FIESTA dip
Marinade for chicken
- ⅓ cup prepared dressing from above
- 1 tsp chili powder
- ½ teaspoon cumin
- ½ tsp garlic powder
- ¼ teaspoon black pepper
Chicken
- 1 ½ pound chicken breasts or chicken thighs trimmed and pounded to all same thickness
Instructions
- For the dressing add all 3 ingredients to a dressing cruet or mason jar.Shake vigorously until emulsified. Store in fridge for about 2 weeks.
- To make marinade, mix together ⅓ cup of the dressing and add rest of ingredients to a gallon size zip top baggie. Take the trimmed chicken and using a fork pierce holes all over chicken. Add trimmed chicken and let marinate for 30 minutes to 8 hours.
