29ouncespetite diced tomatoes with juice (canned)I blend mine up so it’s not chunky
6ounce tomato paste
¼teaspoonkosher salt
¼teaspoonblack pepper
1teaspoondried oregano
½teaspoonItalian seasoning
½teaspoondried basil
Pinchred pepper flakes
9lasagna noodlesbroken into bite size pieces or 8oz package protein pasta ruffles
¼cupparmesan cheeseshaved
½cupmozzarella cheeseshredded
extra mozzarella or Parmesan for serving
Instructions
Heat the olive oil in a large pot over medium-heat.
Add in the onion and cook for 1-2 minutes. Stir in the garlic and cook an additional minute.
Add in the sausage and hamburger, breaking up with a wooden spoon and cook unti browned. Drain any excess grease.
Add in chicken stock, blended tomatoes and tomato paste. Stir until combined and then add the seasonings. Bring to a light boil and add the noodles. Cook for 13-15 minutes, or until noodles are tender.Stir in cheeses and taste for seasonings. Serve with additional cheese if desired. See Notes below!

*Nutrition does not show protein pasta calculations.**If planning on left overs I like to serve my noodles on the side and stir in individually to bowls...this is because as they sit in the fridge they tend to absorb to much of the liquid.
