Lasagna in a soup?! Yes, please! If you're craving comfort in a bowl, this Lasagna Soup needs to be on your must-make list this soup season. It’s warm, hearty, and packed with protein—exactly what we all want during chilly nights. Plus, it’s a fun twist on a classic that your whole family will love!

We love using Pastabilities ruffles pasta (you can find it on Amazon!) because it mimics lasagna noodles perfectly and adds a boost of protein that my family was looking for. That said, regular lasagna noodles work just as wonderfully—they're a pantry staple and deliver the same cozy, comforting vibes—just with a little less protein.

Over the years, I’ve tweaked and perfected this recipe to make it a favorite in our home—and I’m confident your family will love it too.

Ingredients

  • olive oil
  • onion
  • garlic
  • ground sausage

  • chicken broth
  • petite diced tomatoes

  • kosher salt

  • dried oregano
  • italian seasoning

  • red pepper flakes
  • lasagna noodles
  • parmesan cheese

Instructions

This one pot soup is so hearty and delicious and is easy to pull together!

To begin, heat the olive oil in a large pot over medium heat. Once hot, add in the diced onion and sauté for 1–2 minutes until slightly softened. Next, stir in the minced garlic and cook for about another minute, allowing it to become fragrant. Then, add the sausage and ground beef, breaking it up with a wooden spoon as it cooks. Continue cooking until the meat is browned, then carefully drain off any excess grease. After that, pour in the chicken stock, blended tomatoes, and tomato paste, stirring everything together until well combined. Once mixed, add in your seasonings and bring the soup to a gentle boil. At this point, stir in the lasagna noodles and let them cook for 13–15 minutes, or until they are perfectly tender. Finally, stir in the cheeses until melted and taste to adjust any seasonings. Serve warm, topped with extra cheese if desired, and enjoy this cozy lasagna-inspired dish! I will add that if you plan to have left overs, I like to add my noodles separate to bowls. This was the noodles do not absorb all the liquid over night in the fridge.

Equipment

Storage

This soup is excellent as left over! BUT, there is a BUT....Prep and serve your noodles separate. This way they do not absorb all that glorious liquid in the fridge. You will thank me for this tip later!

Top Tip

If you do not like or do not have sausage...using all hamburger works great!

Protein Tip

If you are trying to get more protein into your diet like me, I love to add this pasta. So I use the ruffles style instead of white lasagna noodles and I get a little more health benefit. Here is a link to purchase and a photo below for your reference.

Ingredients

  • 1 Tablespoon olive oil
  • ⅓ cup onion finely chopped
  • 2 teaspoons garlic minced
  • ¼ pound ground sausage
  • ¾ pound ground hamburger
  • 32 ounces chicken broth
  • 29 ounces petite diced tomatoes with juice (canned) I blend mine up so it’s not chunky
  • 6 ounce tomato paste
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • Pinch red pepper flakes
  • 9 lasagna noodles broken into bite size pieces or 8oz package protein pasta ruffles
  • ¼ cup parmesan cheese shaved
  • ½ cup mozzarella cheese shredded
  • extra mozzarella or Parmesan for serving

Instructions

  • Heat the olive oil in a large pot over medium-heat.
  • Add in the onion and cook for 1-2 minutes. Stir in the garlic and cook an additional minute.
  • Add in the sausage and hamburger, breaking up with a wooden spoon and cook unti browned. Drain any excess grease.
  • Add in chicken stock, blended tomatoes and tomato paste. Stir until combined and then add the seasonings.
    Bring to a light boil and add the noodles. Cook for 13-15 minutes, or until noodles are tender.
    Stir in cheeses and taste for seasonings.
    Serve with additional cheese if desired.

**If planning on left overs I like to serve my noodles on the side and stir in individually to bowls...this is because as they sit in the fridge they tend to absorb to much of the liquid.
