Preheat the oven to 375 degrees. Slice the butter and evenly distribute between two muffin pans. Put pans in oven while it is preheating to melt the butter. But keep an eye on it so butter doesn’t burn. In a bowl or blender, beat together remaining ingredients. Then pour some batter into each well making sure it is equally divided.I find about ⅛ of a cup or slightly more is exactly what I need. Bake for about 11-14 minutes, or until it is golden brown, or as golden as you prefer.
