Tips
Honestly, this recipe is so easy. Let the kids watch them in the oven as the they puff up, because when they come out they fall fairly quickly. My only tip is adding the butter to the muffin wells and melting in the oven while the oven preheats. Just keep an eye on it so that it doesn't burn. I also like to make sure my batter is even in all wells of the tin so that it all bakes evenly.

Mini German Pancakes
Ingredients
- 4 tablespoon butter cut uniformly
- 6 eggs
- 1 cup flour
- 1 cup milk
- 1 tablespoon sugar
- ½ teaspoon salt
Instructions
- Preheat the oven to 375 degrees. Slice the butter and evenly distribute between two muffin pans. Put pans in oven while it is preheating to melt the butter. But keep an eye on it so butter doesn’t burn. In a bowl or blender, beat together remaining ingredients. Then pour some batter into each well making sure it is equally divided.I find about ⅛ of a cup or slightly more is exactly what I need. Bake for about 11-14 minutes, or until it is golden brown, or as golden as you prefer.
