Banana Chocolate Chip Muffins

These may not be the prettiest muffins youโ€™ll ever see, but they just might be the best muffins youโ€™ll ever taste! These moist and tender homemade muffins are packed with incredible flavor, so you wonโ€™t miss the dry, domed look of traditional bakery muffins. In fact, theyโ€™re a family favorite in my home and one of the most requested muffin recipes I make. Keep reading for all my best muffin-baking tips plus the two best ways to reheat muffins so they taste fresh from the oven every time!

Ingredients

Ingredients needed for Banana Chocolate Chip Muffins
  • ripe bananas
  • butter
  • sugar
  • sour cream
  • eggs
  • flour
  • baking soda
  • salt
  • vanilla
  • chocolate chips
  • mini chocolate chips

Instructions

Start by creaming together the butter, sugar, and eggs until the mixture is light and fluffy. Next, sift the dry ingredients and gradually add them to the wet mixture, stirring until just combined. Then, mix in the ripe bananas, tangy sour cream, and dreamy vanilla for added flavor and moisture. Gently fold in the chocolate chips and pour the batter into your prepared pans. Top each muffin with mini chocolate chips, if using. Finally, bake until golden, and let the incredible aroma fill your kitchen like a dream.

Equipment

Using a stand mixer makes baking quick breads a little easier, but it is not necessary. You can also use a hand mixer just as well. I have an affiliate link HERE to many of my favorite tools in my own kitchen. Take a look around, I bet you find something new to try out in your own kitchen!

Ripe Bananas

As your bananas get brown spots just hang on to them. The darker they turn the better the flavor and moisture for your bread. I promise! I like to use them when they are almost black on the outside. If you find yourself with these bananas and no time to bake for a couple days, no problem. Simply peel them and pop them into a freezer baggie and freeze until ready to use. I just pull them out the morning of and let them defrost.

Top Tip

Don't skip the sour cream ... it will make your bread and muffins moist and irresistible!

Banana Chocolate Chip Muffins

Ingredients

  • ยฝ cup butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ยฝ cups all purpose flour
  • 1 teaspoon baking soda
  • ยฝ teaspoon salt
  • 1 cup very ripe bananas, mashed
  • ยฝ cup sour cream
  • 1 teaspoon vanilla
  • ยฝ cup chocolate chips
  • ยผ cup mini chocolate chips

Instructions

  • Preheat oven to 350 degrees. Grease a muffin pan or use paper liners. In an electric mixer, using a paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
  • In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in chocolate chips, and pour into prepared pan or liners. I like to use a large cookie scoop and one scoop is the perfect amount.
  • Bake for 18-20 minutes, until a cake tester inserted into the center comes out clean. Let rest for a few minutes in the pan then remove to a cooling rack.
