Variations

Not a walnut fan?....Replace with pecans. Both are fabulous!

Equipment

Equipment can have a big impact on how a recipe turns out. I love my heavy duty baking sheets and parchment paper. Using a good quality vanilla absolutely makes a difference!

Storage

To keep your cookies fresh, store them in an airtight container at room temperature. Ideally, they’ll stay soft and chewy for up to 3 days. Additionally, for even better texture, let them cool completely before sealing to avoid excess moisture.

Top Tip

I always toast my nuts first. You do not have to do that. But for an extra touch it makes a difference.

Ingredients

  • 8 oz semi sweet baking chocolate (usually 2 packages)
  • ¾ cup brown sugar firmly packed
  • ¼ cup butter slightly softened
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ cup flour
  • ¼ teaspoon baking powder
  • 2 cups chopped walnuts optional: toasted

Instructions

  • Preheat oven to 350°
  • If desired, toast the chopped walnuts. Coarsely chop 4 oz of the chocolate and set aside. Microwave remaining chocolate in large bowl and microwave on high for 40 second intervals until chocolate is melted and stirring frequently.
  • To the bowl of melted chocolate add sugar, butter, eggs and vanilla and stir until well blended. Add flour and baking powder, mix well.
  • Stir in chopped chocolate and walnuts
  • Drop by rounded tablespoons (I use the 1 ½ inch cookie scoop) onto parchment lined baking sheet.
  • Bake 12-13 minutes or until cookies are puffed and shiny. Cool 1 minute, remove to wire rack to cool completely. Personally I love mine warm with milk!
