These are the chewiest and thinnest oatmeal cookies with the most flavor you will bake all year! They are Thin and chewy with rich flavor, and perfect texture—ideal for quick baking, cookie swaps, and everyday snacking.

Are you a Thick or Thin cookie fan?!? I love them all! My favorite kind of oatmeal cookie is a THIN oatmeal cookie though. And this recipe hits that craving every time. With the hints of cinnamon it tastes like HOME. So comforting!  I bet it will be a fav of yours too soon!

Ingredients

  • butter
  • sugar
  • brown sugar
  • egg
  • vanilla
  • flour
  • cinnamon
  • baking soda
  • salt
  • baking powder
  • nutmeg
  • cornstarch
  • old fashioned oats

Instructions

Honestly, if you need a no nonsense and straight forward recipe this is the one! It comes together so quickly in one bowl. I love to use my mixer for this recipe as it does all the work for me. Once on the cookie sheet, press the cookie ball down slightly with a measuring cup that has been dipped in granulated sugar. It gives it just a little extra sweetness. Baking the cookies until the centers are not quite done will give you the best texture. The cookies will finish cooking for the few minutes that they are on the baking sheet.

Substitutions

Cinnamon and nutmeg are not necessary in this recipe. But I will say it adds so much more depth of flavor! But, if you just don't like it just leave it out!

Storage

Store the cookies in an airtight container for up to 4 days!

Can I freeze these cookies?

Yes! They can be baked then frozen for up 3 months. Just line them between layers of parchment in a freezer zip top baggie.

Ingredients

  • 1 cup 2 sticks unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1-⅔ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅕ teaspoon baking powder
  • ⅕ teaspoon ground nutmeg
  • ½ teaspoon cornstarch
  • 1-½ cups old fashioned oats

Instructions

  • Preheat oven to 350°. Line 2 large baking sheets with parchment paper; set aside.
  • In a large bowl with an electric mixer, beat butter and both sugars until fluffy. Mix in egg and vanilla until well blended. Combine flour, cinnamon, baking soda, salt, baking powder, nutmeg and cornstarch in a bowl. Stir into the butter mixture. Gently stir in oats until well blended.
  • Shape dough into rounded cookie scoop sized balls. About 1 ½ Tablespoon size. Place parchment lined baking sheet. Flatten slightly with the bottom of a measuring cup dipped in sugar. Bake for 8-10 minutes. Until edges are set and center is not quite wet. Let cool on baking sheet 3-5 minutes before removing to a wire rack to cool completely.
