This is one of my FAVORITE salads. We actually use this dressing frequently. On Rice bowls, on tacos and especially for this salad. It is a powerful dressing so a little goes a long way. Give it a try!
Fiesta Salad
Dressing/Marinade
- 1/2 cup oil
- 1/2 cup vinegar
- 1 packet Hidden Vally Ranch FIESTA Dip Mix
Salad
- Green Leaf Lettuce
- Frozen Corn, thawed
- 1 can black beans, drained and rinsed
- Bell Pepper
- Purple Onion
- Tomatoes
- Black Olives
- Avocado
- Cheddar Cheese, grated
Marinade
- 1/4 cup dressing from above
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 Tablespoon vinegar
Add all to chicken in baggie to glass dish and let sit for 15-30 minutes. Grill until cooked through (165 degrees)
Mix salad ingredients together and top with dressing! Serve as main dish or side dish.
