Ingredients
- olive oil
- onions
- chicken breasts
- chili powder
- cumin
- garlic powder
- pepper
- smoked paprika
- onion powder
- can black beans
- can diced tomatoes with green chiles
- any toppings you want! sour cream, guacamole, salsa etc

Instructions
Step 1: dice and season chicken then cook until done
Step 2: Add tomatoes with green chilies and black beans
Step 3: Add broth, rice, and seasonings
Step 4: After rice finishes cooking top with cheese and cilantro and serve!

Substitutions
I love recipes that are forgiving and so easy to altar for tastes and diets.
- Rice - Definitely use instant rice as it cooks quicker and will not dry out the chicken. But using instant brown or jasmine rice are great substitutions
- Diced tomatoes with green chilies - There are different levels of spice with these cans. Be sure and use the blend best for your family. Or just use a can of petite diced tomatoes with out chilies
- Black Beans - Pinto beans are also great in this skillet meal
Variations
- Change: Change it up! If your crew loves corn....corn tastes fabulous in this dish. Especially the Fiesta style canned corn.
- Spice: If you like more spice add more chili powder or a pinch of red pepper flakes. Stirring in half a diced jalapeño is also excellent for spice!
- Serving Style: You can serve on a plate with chips and extra toppings or grab a large burrito and make it the filling for your burrito!
Storage
This recipe is FABULOUS for meal prepping. This will last in the refrigerator in an air tight container for 4 days!
Just reheat in the microwave for 1-2 minutes at 30 second intervals, stirring in between and it is a perfect lunch!

Chicken Burrito Skillet
Ingredients
- 1 Tablespoon olive oil
- 2 Tablespoons finely diced onions more is always ok!
- 1 pound boneless skinless chicken breasts or thighs cut into bite size pieces
- ½ teaspoon chili powder
- ¾ teaspoon cumin-divided
- ½ teaspoon garlic powder-divided
- ¼ teaspoon black pepper
- ¼ teaspoon smoked paprika
- ⅛ teaspoon onion powder
- 15 oz can black beans drained, rinsed
- 10 oz can diced tomatoes & green chilies undrained
- 1 ¼ cup chicken broth
- 1 ¼ cups instant white rice uncooked
- ½ cup shredded Cheddar
- Chopped cilantro optional
Toppings
- sour cream
- salsa
- guacamole
- pico
Instructions
- Reserving ¼ teaspoon cumin and ¼ teaspoon garlic powder… add seasonings to chicken and stir until well coated. Heat oil in large skillet over medium-high heat. Add onion and cook until just tender. Add chicken in single layer and cook undisturbed for 1 minute. Stirring, cook for about 3-4 minutes until just done. Stir in black beans, undrained RoTel and broth; bring to a boil. And stir well. Stir in rice, reserved seasonings and cilantro. Cover, reduce heat and simmer 7 to 10 minutes or until rice is tender. Sprinkle top with cheese and cilantro, if desired.
- If you would like it extra cheesy stir in ½ cup cheese right when finished cooking. Then top with the additional cheese and cilantro.
