If you're looking for an easy and festive treat, these Christmas Funfetti Cookies are bursting with holiday cheer and just the right amount of sweetness! I mean—who doesn’t love a little fun and sparkle during the Christmas season?

One of the best parts? You can easily halve the recipe and still get around 20 cookies—perfect for a cozy night in with the family and a sweet little gift for a neighbor.

These soft, buttery cookies come together quickly and are perfect for holiday parties, cookie trays, or a fun afternoon of Christmas baking with the kids. They’re a crowd-pleaser that both adults and children will love.

Instructions

This is a basic cookie recipe and mixing it together is a breeze. Scoop out the dough onto a parchment lined baking sheet and press extra jimmies/sprinkles right on top of each cookie. Pop in fridge for an hour. Then place cold sheet right into the preheated oven. You will pull these out when the center is still slightly soft. But it will firm up on the hot pan for a few minutes. This will yield a chewy cookie!

Equipment

Baking supplies are a must in a kitchen! And having quality tools in your kitchen makes baking so much more fun! Here is a link to some of my favorites! I also have a favorite baking sheet. If you need more for the holiday season I suggest these!

Storage

These cookies keep great in an airtight container for 3-4 days! They can also be frozen easily! Let cool completely then freeze in a freezer safe zippered baggie. I like to stack mine upright on top of each other then lay on side. SO easy!

Jimmies are easy to find in stores all over! Try different colors throughout the year for different holidays! So FUN!

Top Tip

Once I have the scoops of dough on my baking sheet and before placing in the fridge I like to press extra jimmies right on top. It adds that extra texture once baked.

Christmas Funfetti Cookies

Equipment

  • Half Sheet Pan
  • medium cookie scoop
  • parchment paper
  • Stand Mixer

Ingredients

  • 3 cups all purpose flour
  • 2 Tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter room temperature
  • 1 ½ cups granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 cup sprinkles/jimmies

Instructions

  • Combine the flour, salt, cornstarch, and baking soda in a bowl then whisk together and set aside. In a mixer fitted with the paddle attachment cream the butter and sugar. Mix on high until light and fluffy. Mix in the egg and vanilla until well combined.
  • Add the dry mixture to the butter mixture and mix on low until almost combined. Add the sprinkles and mix on low until just combined.
    Using a medium cookie scoop (about 2 Tablespoon) scoop out cookie dough onto a parchment lined baking sheet.
    Pat extra jimmies on top of each cookie. Place baking sheet in fridge for one hour.
    Preheat oven to 350. Place cold baking sheet in preheated oven and bake 11-12 minutes. Bake just until edges are set. Centers will be slightly soft, but will continue to bake while sitting on cookie sheet for 5 minutes. Then remove to a wire rack to cool completely.

Easily halved for a smaller batch!
