Easy Cinnamon Crumb Cake – A Cozy Treat Made with Boxed Cake Mix

Who else loves the warm, cozy comfort of cinnamon cake? I know I do—especially when life is busy and I still want to serve up something homemade. That’s why I’m obsessed with this easy Cinnamon Crumb Cake. It starts with a simple boxed cake mix, but thanks to a yummy cinnamon swirl and buttery crumb topping, it tastes totally from scratch!

As a busy mom, I’m always looking for shortcuts that don’t sacrifice flavor, and this cake is one of my favorite go-to desserts. It comes together in no time, makes the whole house smell amazing, and that cinnamon swirl in the center? Absolute joy!

Whether you're serving it for brunch, dessert, or a sweet afternoon snack , this cinnamon cake is sure to become a family favorite. Trust me—no one will guess it started with a box!

Ingredients

  • box butter yellow cake mix
  • small box instant vanilla pudding mix
  • oil
  • milk
  • water
  • eggs
  • cinnamon
  • flour
  • brown sugar
  • butter

Instructions

While the oven preheats mix all the cake ingredients together and beat for 2 minutes at medium speed. Grease a tube pan really well. Then pour ¾ of the batter into the pan. Mix together the ingredients for the crumb mixture. Sprinkle ⅔ of the crumb mixture over the batter in the pan. Spread evenly. Pout the rest of the batter on top then spread the rest of the crumb and smooth out. Bake until toothpick comes out clean and let cook for about 25 minutes. Then invert onto a serving platter.

Tips

  • Cinnamon - regular cinnamon is great! But for an extra hint of cinnamon add an extra ¼ teaspoon on Vietnamese Cinnamon. It is SO GOOD!
  • Mixing - Do not over mix. Mix for the 2 minutes and that should be plenty. 🙂
  • Cooling - Only cool for a maximum of 25 minutes in the tube pan. Then remove to a cooling rack or platter. Sitting to long in the pan will make removing more difficult.

Ingredients

Cake

  • 1 box butter yellow cake mix
  • 1 4 serving size box vanilla instant pudding mix
  • 2 Tablespoons oil
  • ⅓ cup milk
  • 1 cup water
  • 2 eggs
  • ¼ teaspoon cinnamon

Streusel

  • ½ cup flour
  • ½ cup brown sugar
  • 2 teaspoons cinnamon
  • 2 Tablespoons butter melted
  • Optional: additional ¼ teaspoon Vietnamese cinnamon

Instructions

  • Preheat oven to 375 degrees. In large bowl blend cake mix, pudding mix, oil, milk, water, eggs and cinnamon.
    Beat 2 minutes at medium speed. Do not over mix.
    Spread ¾ of batter evenly in greased and floured 10 inch tube pan.
  • Combine streusel ingredients.
    Sprinkle ⅔ cup of mixture over batter in pan.
    Spread remaining batter over streusel. Top with reserved streusel.
    Bake 40-50 minutes at 375 degrees until tooth pick is clean.
    Cool right side up 25 minutes. Remove from pan and serve.

Notes

Having Vietnamese Cinnamon on hand comes in handy for baking! I love to add just a ¼ teaspoon to the this crumb mixture in addition to the regular cinnamon.
