If you’re looking for a festive and fun Halloween treat, these Halloween Funfetti Cookies are just the thing! I mean, who doesn’t love a good funfetti cookie, right? They’re soft, buttery, and chewy with pops of color in every bite. For this batch, I leaned into the spooky season by using Halloween-colored jimmies—and they turned out so cute! Whether you’re baking with your kids, bringing treats to a party, or just craving something sweet, these easy Halloween cookies will bring out your inner child. Ingredients

  • flour
  • cornstarch
  • baking soda
  • salt
  • butter
  • sugar
  • eggs
  • vanilla
  • sprinkles/jimmies

Instructions

To start, combine the flour, salt, cornstarch, and baking soda in a bowl, whisking them together before setting the mixture aside. Next, in a stand mixer fitted with the paddle attachment, cream the butter and sugar on high speed until the mixture is light and fluffy. Then, mix in the egg and vanilla until well combined. Gradually add the dry ingredients to the butter mixture, mixing on low speed until almost fully incorporated. At this point, add the Halloween sprinkles and mix just until everything is evenly combined. Using a medium cookie scoop (about 2 tablespoons), portion the dough onto a parchment-lined baking sheet, then gently press extra jimmies onto the tops of each dough ball. Afterward, place the baking sheet in the fridge to chill for one hour. When ready to bake, preheat your oven to 350°F and transfer the cold baking sheet straight into the oven. Bake the cookies for 11–12 minutes, just until the edges are set—the centers will still be soft but will continue baking on the cookie sheet for another 5 minutes. Finally, transfer the cookies to a wire rack to cool completely before serving.

These cookies will keep in an airtight container for 3-4 days at room temperature. Your kids will love opening their lunch box to one of these!

Top Tip

Press in a few extra jimmies onto the tops to the rolled cookie dough before chilling. It really adds an extra pop to the finished cookies!

Halloween Funfetti Cookies

Ingredients

  • 3 cups all purpose flour
  • 2 Tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter room temperature
  • 1 ½ cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 cup sprinkles/jimmies

Instructions

  • Combine the flour, salt, cornstarch, and baking soda in a bowl then whisk together and set aside.
  • In a mixer fitted with the paddle attachment cream the butter and sugar.
    Mixing on high until light and fluffy. Mix in the egg and vanilla until well combined.
  • Add the dry mixture to the butter mixture and mix on low until ALMOST combined.
  • Add the sprinkles and mix in low until just combined.
  • Using a medium cookie scoop (about 2 Tablespoon) scoop out cookie dough onto a parchment lined baking sheet.
    Pat extra jimmies on top of each cookie.
    Place baking sheet in fridge for one hour.
  • Preheat oven to 350.
    Place cold baking sheet in preheated oven and bake 11-12 minutes.
    Bake just until edges are set. Centers will be slightly soft but will continue to bake while sitting on cookie sheet for 5 minutes.
    Then remove to a wire rack to cool completely

Notes

Do not skip the chill time!
This recipe makes about 42 cookies, but it is easily halved for a smaller batch.
