Rice Krispies Pumpkins

Aren’t these Rice Krispie Treat Pumpkins just the cutest fall treat? They’ve become a beloved fall tradition in our family, and it’s easy to see why! Not only are they fun and festive, but they’re also quick to make and perfect for both Halloween and Thanksgiving celebrations. Whether you’re looking for a kid-friendly dessert or a sweet snack to brighten your holiday table, these pumpkin-shaped treats are sure to be a hit year after year.

These may look time consuming, but I promise they go quick! Once you get a hang of it you will want to do them every year just to see the smiles on your kids faces!

Ingredients

  • butter
  • large marshmallows
  • Rice Krispie cereal
  • tootsie rolls
  • orange food coloring
  • green buttercream frosting

Instructions

Start by laying out a piece of parchment paper on your work surface. Next, cut 6 to 10 Tootsie Rolls in half, depending on how many pumpkins you plan to make and their desired size.

Then, prepare your Rice Krispie Treat mixture. In a large pot, melt the butter over medium-high heat. Once melted, add the marshmallows and stir constantly until they are completely melted and smooth.

If you're using regular Rice Krispies, this is the time to stir in your orange food coloring, mixing well to fully incorporate the color.

Immediately remove the pot from heat and add in the cereal. Stir quickly but gently until the cereal is fully coated and the mixture is evenly combined.

Now, working quickly, spray your hands with nonstick cooking spray—even if you’re using gloves—to make shaping easier. Roll the mixture into firm, compact balls to form the pumpkin shapes.

Once shaped, press a small indentation into the top of each pumpkin and insert a halved Tootsie Roll as the stem. Place each pumpkin on the prepared parchment paper.

As they cool, some may begin to separate slightly—simply press them back together gently and they’ll hold their shape as they set.

Finally, pipe green icing onto each pumpkin to create leaves and vines for a fun, festive finish!

Storage

If they make it past the party...these will keep for 3-5 days in an airtight container!

Top Tip

For the vine use buttercream icing, either tubed or homemade. However, do NOT use the gels in the tube. This runs and does not look as good.

Rice Krispie Treat Pumpkins

Ingredients

  • 4 Tablespoons butter
  • 42 jet puffed large marshmallows
  • 5 ½ cups Rice Krispies cereal Halloween orange, if available
  • Orange food coloring if using regular Rice Krispies
  • 7 Tootsie Rolls cut in half
  • Green icing store bought tube or homemade buttercream

Instructions

  • Lay out a piece of parchment paper. Cut about 6-10 Tootsie Rolls in half depending on size of pumpkins.

Mixture

  • Prepare Rice Krispie Treat mixture by melting butter over medium high heat. Add marshmallows and stir constantly to melt marshmallows. If using regular Rice Krispie cereal you will now add orange food coloring to the marshmallow mixture and stir to completely incorporate. Remove from heat and add cereal. Stir until well incorporated working quickly, but gently.
    Working quickly spray hands with cooking spray. Even if using gloves. Roll cereal mixture into firm balls.
    Make an indention and add Tootsie Roll for stem.
    Lay on parchment. As they cool they may come apart a bit. Just press them back together as they cool and they will hold their shape.
    Pipe on icing for leaves and stems.

Notes

Since they are warm then will slightly loose their shape as they sit so just gently push back together. Once they are cooled they hold their shape!
