Around here, summer means finding every excuse possible to cool off! These Watermelon Lime Popsicles have become one of our favorite warm-weather treats because they're so simple to make and incredibly refreshing. With just three ingredients, you can have a batch ready for the freezer in minutes. The sweet watermelon paired with a squeeze of fresh lime creates the perfect icy treat for those hot summer afternoons when you need a little relief from the Texas heat.

Ingredients

These popsicles come together with only three ingredients!

  • cubed watermelon
  • lime
  • agave syrup or honey or monk fruit sugar

Instructions

To begin, add the cubed watermelon, lime juice, and your preferred sweetener to a blender. Blend until the mixture is completely smooth and well combined. Next, let the mixture sit for about 10 minutes to allow any foam to settle. Once rested, carefully pour the watermelon mixture into popsicle molds, leaving a little room at the top for expansion. Then, place the molds in the freezer and freeze for at least 4 hours, or until completely firm. When ready to serve, remove the popsicles from the molds and enjoy a refreshing homemade treat that's perfect for hot summer days!ย See the tips below for the best popsicles this summer! Equipment

You only need a blender and popsicle molds! Such a great summer treat without heating up the kitchen! These are my favorite silicone molds and you will need two of these molds for the recipe.

Storage

After Freezing for four hours these can be removed from the molds and stored in a container or baggie in the freezer.

Top Tip

To help prevent white tips from forming on your popsicles, use agave syrup or honey as the sweetener. This helps with the ice crystals settling at the tops. Also, let the watermelon mixture rest for about 10 minutes before pouring it into the molds. This allows the pulp to settle and helps the vibrant watermelon color distribute more evenly throughout the popsicles, resulting in a beautiful bright red color from top to bottom.
