Easter Monster Cookies are a classic thick and chewy monster cookie with a Easter twist by adding mini Cadbury eggs! Loaded with hearty oatmeal, creamy peanut butter and easter candy makes it a hit with all ages!

These are so great for the Easter season. I used Mini Cadbury eggs because they are a fav around here! But feel free to use spring colored M&Ms as well!
This was inspired by my Halloween Monster Cookies on this site, and then you can use your extra Cadbury eggs for these Easter Bird Nests.
Ingredients
A cast of all the characters for these cookies...I used my FAVORITE vanilla as well!

- eggs
- brown sugar
- granulated sugar
- salt
- vanilla
- peanut butter
- butter
- mini Cadbury eggs
- chocolate chips
- baking soda
- oatmeal

Substitutions
Fell free to use Spring M&Ms instead of Cadbury eggs, add some raisins or toffee bits for a different twist!
Equipment
Equipment can have a big impact on how a recipe turns out. This recipe makes SO MANY COOKIES that I like to use a full sheet pan so that I can fit 20 cookies at a time. I line with a parchment paper and bake away!

Ingredients
- 3 eggs
- 1 ¼ cups light brown sugar packed
- 1 cup granulated sugar
- ½ tsp salt
- ½ tsp vanilla extract
- 1 ⅓ cups creamy peanut butter
- 1 stick butter softened
- ½ cup mini cadbury eggs measure whole before chopping
- ½ cup chocolate chips
- 2 tsp baking soda
- 4 ½ cups oatmeal
Optional Add Ins
- ¼ cup heath bits
- ¼ cup mini chocolate chips
- ¼ cup raisins
Instructions
- Preheat the oven to 350 degrees F.
- Line cookie sheets with parchment paper.
- Place Cadbury eggs into a baggie and with a meat mallet or rolling pin break apart. You may also pour onto a cutting board and chop as well.
- In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the chocolate candies, chocolate chips, optional ingredients if using, baking soda, and oatmeal. Drop by 2 tablespoons scoop 2 inches apart onto the prepared cookie sheets.Top with additional chopped candies if desired but not necessary. Bake for 8 to 10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool.
