4. Step 4: After baking immediately top with mini egg

Top Tip

Do you struggle with peanut butter cookies that turn out dry? or crumbly? The trick is not to over mix this dough. Only mix until combined between each step. Be gentle and it will yield you a delicious tender cookie!

Variations

You can certainly use regular granulated sugar for rolling!

And you can change up candy! Instead of a mini egg you can try a kiss, or peanut butter cup.

Storage

These store amazing for 3-5 days in an airtight container. (if they last that long!)

Peanut Butter Cadbury Cookies

Ingredients

  • Mini Cadbury Eggs
  • ½ cup shortening
  • ¾ cup creamy peanut butter
  • ⅓ cup sugar
  • ⅓ cup light brown sugar packed
  • 1 egg
  • 2 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ¼ tsp baking soda
  • ½ teaspoon salt
  • ⅓ cup sugar for rolling cookies

Instructions

  • Preheat oven to 375°F and line cookie sheet with parchment paper. 
    Beat shortening and peanut butter in large bowl until well blended.
    Add ⅓ cup granulated sugar and brown sugar; mix until combined.
    Add egg, milk and vanilla; mix until combined.
    Stir together flour, baking soda and salt; mix into peanut butter mixture. Making sure not to overmix.
    Shape dough into 1 ½-inch balls. Roll in sugar and place on prepared cookie sheet.
    Bake 7-8 minutes or until edges are just set and small cracks are just beginning to form. Do not overbake.
    Immediately press a Cadbury egg into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely.
