They’re easy to make, fun for parties, and perfect for peanut butter and chocolate lovers alike. Whether you’re baking for a Halloween party, school event, or just want a sweet seasonal dessert, these Reese’s Pumpkin Cookies are sure to disappear fast!

  • granulated sugar
  • light brown sugar
  • unsalted butter
  • egg
  • peanut butter
  • vanilla extract
  • Reese's Pumpkins
  • flour
  • salt
  • baking soda

Instructions

This recipe is so easy and comes together quickly making it a perfect and quick treat. Cream together the butter and sugars until fluffy. Add the egg and stir to combine. Add the peanut butter and vanilla and mix to combine. Whisk together the dry ingredients in a bowl then add to the wet mixture. It is important to just mix until it is combined at this point. Do not over mix or you will get hard and dry cookies.

Using a medium cookie scoop, scoop onto parchment lined pan. Bake for 10 minutes. While baking unwrap candies and have them ready for the show! Bake just until the edges are showing signs of doneness - small cracks slightly golden on bottom. DO NOT OVER BAKE. Pull out of oven and immediately press a candy in the center. Let sit on pan for 2 minutes or so then remove to a wire rack to let cool completely.

Hint: Slightly underbaking is ok as it will continue to cook for a minute on the pan.

Having a well stocked kitchen is so important this time of year. From treats to appetizers you need to be prepared with tools on hand to make your time in the kitchen more efficient. For this recipe a good quality baking sheet pan is so important. I also love to use parchment paper and also always have a good quality cookie scoop. FAQs

How do I get a soft and chewy cookie?

With peanut butter cookies it is super important that when mixing in the dry ingredients you only slowly mix until no flour (white streaks) is showing. Do not over mix. Also, do not over bake! Mine are finished just under 10 minutes.

Do I need to roll the cookies in sugar?

Nope! That is just for appearance. But do make sure you roll the dough in your hands until smooth as this helps the balls to stay smooth

Halloween Reese's Cookies

Ingredients

  • ½ cup unsalted butter room temperature
  • ¾ cup brown sugar packed
  • ¼ cup granulated sugar
  • 1 large egg room temperature
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 ½ cups all purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 30 Reese's Pumpkins Candies
  • ¼ cup granulated sugar for rolling optional

Instructions

  • Preheat oven to 375℉.
    Line two baking sheets with parchment paper. Silicone mats can also be use.
    Unwrap candies and set aside.
  • Cream together the butter and sugars in a stand mixer or with a hand held mixer until fluffy. About 2 minutes total. Add the egg and mix in to combine. Add peanut butter and vanilla and mix until smooth and creamy.
  • In a bowl whisk together the flour, salt and soda and add to wet mixture. Mix this in JUST until combined. It is important to not over mix.
  • Using a medium cookie scoop, scoop dough into balls. This is about 1 ½ Tablespoons of dough. I like to roll the sides of the cookie ball in the extra sugar. This just gives it a classic look. Leaving about 2 inches between scoops.
    Bake at 375℉ for about 10 minutes.
    They should just be starting to crack and appear done on the sides. It is super important not to over bake!
  • Remove from oven and immediately press unwrapped candy into center of cookie.
  • Allow to cool for 2-5 minutes then remove to wire rack to cool completely.

Notes

For a chewy cookie be sure not to over mix. As soon as the flour is mixed in, stop mixing. 
It is important not to over bake. Mine are usually done just under 10 minutes. you will start to see cracks.

    These were SOOO good. I couldn’t find the pumpkins so I just used regular Reese’s, but they were still incredible. I am going to keep my eye peeled earlier for the pumpkins next year! Thanks for the great recipe.
