Equipment

A well stocked kitchen makes these types of recipes come together effortlessly. A sharp knife, good cutting board, a bowl and scraper to mix and a V-shape cutter! If you don't have one they are not expensive and so fun to have on hand! Get one HERE! It is the one I have and works great for less than $7!

Presentation

Although the orange cups are absolutely adorable, letโ€™s be realโ€”holiday prep can get hectic! If you're short on time, thisย fruit salad still looks beautiful served in a festive bowl. Preparation

You definitely want to prep this salad the same day to keep everything crisp and fresh. Strawberries can lose their plumpness after a night in the fridge.

Autumn Fruit Salad in Orange Cups

This fresh holiday fruit salad is made with seasonal fruit and pomegranate arils. Serve it in cute orange cups or a festive bowl for a bright, healthy addition to your holiday table!

Course: Side Dish
Cuisine: American
Keyword: autumn, fruit salad, grapes, kiwis, oranges, pomegranates, side dish, thanksgiving

Ingredients

  • ยผ cup fresh orange juice
  • 2 Tablespoons honey
  • 1 cup red grapes halved
  • ยฝ of large or 1 small Honeycrisp apple cored and chopped
  • 1-2 oranges peeled and pitted
  • 1 kiwi peeled, halved and thinly sliced
  • ยฝ cup pomegranate arils
  • ยฝ cup pecan halves roughly chopped
  • oranges for fruit cups

Instructions

  • Combine juice and honey and mix well. Set aside.
  • In a medium bowl mix all fruit and pecans together and drizzle juice over top. The fruit should have a very light coating, but should not be pooling too much at the bottom. (May not use all of juice).
  • For Orange cups: slice top and bottom of a medium sized orange. Just enough for it to sit flat. Not enough to draw out juice. Using a v-shape cutter make cuts along center of orange. Once done twist halves apart. Using a paring knife, slice around edge of orange releasing the fruit. Use a spoon to scoop out the trim white membranes from fruit and use this as the orange in the salad.
