We adore this soup. My husband grew up eating this and his mom handed down the recipe. Since she had 5 kids and 4 were hungry growing boys she would make a huge batch! She always served hers with Moist Skillet Cornbread! You can also get creative and make some cheese toast! See the image below!

Ingredients

  • ground beef
  • onion
  • salt/pepper
  • granulated garlic
  • dried thyme
  • dried oregano
  • bay leaves
  • water
  • beef broth
  • potatoes
  • carrots
  • canned green beans
  • canned corn
  • canned tomatoes
  • tomato sauce
  • canned tomatoes with green chiles

Instructions

This recipe has a lot of ingredients but is SO EASY to make! You will not be disappointed!

Brown meat with the chopped onions. Drain fat from meat. While meat is draining, pour broth and water in pot and bring to a boil. Then add potatoes and carrots. Now add the meat and onions to the pot and bring back to boil, then add rest of ingredients and simmer for 30 minutes or longer. See the video below!

Equipment

A nice soup pot is worth the money and storage space. One with a heavy bottom will help with creamy soups from sticking quite as quickly. It is also great to have on hand for sauces, frying, cooking candies etc! Here is a link to a good one!

Substitutions

If spice is something your crew is not a fan of simply swap plain canned tomatoes for the ones with green chiles. If you like a lot of spice swap the plain tomatoes for the tomatoes with green chiles. There are so many ingredients the spice is not that strong.

Storage

Grab an airtight bowl and store the leftovers in the fridge for 3-4 days. I personally love these bowls to store extra soups, stews and sauces in the fridge!

Ingredients

  • 1 pound ground beef
  • 1 small onion chopped
  • ½ teaspoon salt

  • 15 oz Whole Kernel Corn, canned
  • 14.5 oz diced tomatoes, canned*
  • 8 oz tomato sauce, canned
  • 10 oz diced tomatoes with green chilies, canned*

Notes

*If you don’t like spice substitute a can of just diced tomatoes for the can of tomatoes with green chilies.
*I personally just use the juice of tomato can (or blend it up) and squeeze extra juice from the diced tomatoes can as my family doesn’t like to many tomatoes.
