It’s Soup Season! Do you ever crave “home” cooking? Well, this is down home old fashioned beef vegetable soup. It will fill you up and keep you warm on a cool evening! It’s a must have recipe to hold on to. So be sure and save this one! You can tailor it to your family’s tastes! Let me know if you try this one!!
Beef Vegetable Soup
Ingredients
- 1 pound hamburger
- 1 small onion chopped
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon granulated garlic
- ½ teaspoon thyme
- ½ teaspoon oregano
- 1-2 bay leaves
- 3 cups Water
- 2 cans beef broth 14.5 oz each
- 2-3 potatoes diced
- 2-3 carrots diced
- 1 14.5 oz can green beans drained
- 1 15 oz can of Whole Kernel Corn
- 1 diced tomatoes 14.5 oz can
- 1 tomato sauce 8 oz can
- 1 diced tomatoes with green chilies 10oz can
Instructions
- Brown meat and onions. Drain fat from meat. While meat is draining, pour broth and water in pot and bring to boiling and add potatoes and carrots. Add meat and onions and bring back to boil, then add rest of ingredients and simmer for 30 minutes or longer.
- If you don’t like spice substitute a can of just diced tomatoes for the can of tomatoes with green chilies.
- Also, I personally just use the juice and squeeze extra juice from the diced tomatoes can as my family doesn’t like to many tomatoes.
