If you ever find yourself craving cozy, comforting home cooking, then this Old-Fashioned Beef Vegetable Soup is just what you need. It's the kind of hearty, down-home recipe that warms you from the inside out—especially on a chilly evening. With hamburger meat, rich broth, and plenty of vegetables, this classic soup is both filling and satisfying. Even better, it’s easy to customize based on your family’s favorite ingredients. So whether you're feeding a crowd or just need a comforting bowl for yourself, this is one must-make soup recipe you'll want to save and make again and again!

We adore this soup. My husband grew up eating this and his mom handed down the recipe. Since she had 5 kids and 4 were hungry growing boys she would make a huge batch! She always served hers with Moist Skillet Cornbread! You can also get creative and make some cheese toast! See the image below!

Instructions
This recipe has a lot of ingredients but is SO EASY to make! You will not be disappointed!
Brown meat with the chopped onions. Drain fat from meat. While meat is draining, pour broth and water in pot and bring to a boil. Then add potatoes and carrots. Now add the meat and onions to the pot and bring back to boil, then add rest of ingredients and simmer for 30 minutes or longer. See the video below!
Equipment
A nice soup pot is worth the money and storage space. One with a heavy bottom will help with creamy soups from sticking quite as quickly. It is also great to have on hand for sauces, frying, cooking candies etc! Here is a link to a good one!
Substitutions
If spice is something your crew is not a fan of simply swap plain canned tomatoes for the ones with green chiles. If you like a lot of spice swap the plain tomatoes for the tomatoes with green chiles. There are so many ingredients the spice is not that strong.

Storage
Grab an airtight bowl and store the leftovers in the fridge for 3-4 days. I personally love these bowls to store extra soups, stews and sauces in the fridge!
Fun
When serving to kids I love to make fun cheese toast to go along with soups! Take a look at these!

*I personally just use the juice of tomato can (or blend it up) and squeeze extra juice from the diced tomatoes can as my family doesn’t like to many tomatoes.
