Greek Inspired Grilled Chicken

Savor the flavors of Greece with this Greek Inspired Grilled Chicken recipe, marinated in fresh lemon juice, garlic, and herbs. Perfect for healthy grilling, Mediterranean diets, and easy weeknight meals.

I love all these fresh flavors. Fresh lemon juice herbs, garlic… all of it lends to such a light and fresh taste. I love to grill this chicken, but you can certainly cook it on the stove as well. Serve it with sides or put on top of a salad. I promise you can’t go wrong!

I love to grill! This is so yummy marinated for at least 20 minutes then grilled up. I promise you will love it!

Ingredients

  • olive oil
  • lemon juice
  • lemon zest
  • greek seasoning blend
  • sweet paprika
  • sea salt
  • pepper
  • fresh garlic
  • red wine vinegar
  • chicken breast, boneless/skinless

Instructions

Trim the chicken breasts and gently flatten until all the same thickness. Using a fork poke holes all over the breasts and put into a baggie or glass dish. Mix all the other ingredients together and pour over the chicken. Massaging it into the breasts. Allow the marinade to work for at least 20 minutes. All day is even better!

Heat the grill to 400 degrees and cook for 6-7 minutes on each side until they reach 165 degrees.

Hint: make sure not to over cook!

Substitutions

No greek seasoning blend? No problem. Simply blend together 1 teaspoon oregano, 1 teaspoon basil, ½ teaspoon onion powder, ½ teaspoon garlic powder a little salt and a little pepper!

Storage

This recipe is so great for meal prep! Whether you use it for a salad or with sides! Grill it up and store for 3 days in the fridge!

Ingredients

  • ⅓ cup olive oil
  • 3 Tablespoons lemon juice fresh is best!
  • 1 lemon, zested
  • 2 teaspoons Greek seasoning blend dried herb blend
  • 1 teaspoons paprika
  • 1 teaspoon sea salt
  • ¼ teaspoon coarse black pepper
  • 2 cloves garlic finely minced
  • 3 Tablespoons red wine vinegar
  • 4 medium chicken breasts boneless/skinless

Instructions

  • Mix all ingredients except chicken in a jar fitted with a tight lid and shake vigorously. Trim chicken and flatten just a bit until same width. Grab a fork and poke holes all over breasts. Place in a baggie or shallow glass dish and pour marinade over and toss until coated. Store in fridge at-least 20 minutes, but hours is best! Grill until 165 internal temperature.
